Banana & Cranberry Muffins


These are one of our favorite muffins!!

I'm no chef and I don't really ever stick to the recipe steps and it always works out fine so I'll just tell you how I make them and hopefully it will work out for you too!






Ingredients
3 cups of mashed banana (Approx 5 medium bananas)
1 cup of whole wheat flour
1 cup of quick cooking oats
1/4 cup flaxseed meal
1/2 cup wheat germ
3 eggs
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1/2 tsp salt
2 tsp vanilla extract
1 Tblsp Ground cinnamon
1 cup dried cranberries
1/2 cup of oil (I use a good quality oil like rice bran or macadamia oil which ever I have on hand)
1/2 cup of maple syrup
2 Tbsp pecan nuts chopped up roughly (optional)



Steps
Pre heat oven to 350 degrees F (around 180 degrees C)
1. In a mixer add:
All the wet ingredients......mashed banana, eggs, oil, maple syrup, vanilla extract mix on medium until all combined.

2.Add everything else except the nuts and cranberries. Mix on medium till all combined

3.Add cranberries and nuts mix on low until combined.

4.Grease a cup cake tin of 12 and evenly distribute muffin mix

5 Cook for approx 25 mins

Serve warm or cold (with warm custard is nice for a desert for the kids). They also freeze nicely, I like to double the mixture freeze them and use them in school lunch boxes.
